Ben Spence makes his artisan chesse on the farm in ASysgarth, Wenselydale.

A superb artisan Dales cheese produced in the village of Wensley, Wensleydale by Ben Spence.  He is the only artisan cheesemaker in Wensleydale.  Old Roan is made using raw milk to a slow traditional recipe, resulting in a cheese that is smooth and creamy.

The Wenselydale Creamery is based in Hawes and is a major employer in the Upper Dales.

 The Wensleydale Creamery, based at Hawes in Wensleydale , is home of the famous crumbly Yorkshire Wensleydale cheese

and a popular Visitor Centre.

They produce around 4000 tonnes of cheese a year. Their range includes many flavoured cheeses, such as Wensleydale & Cranberries, as well as Coverdale and smoked cheese.

Cotherstone is made in Middleton-in-Teesdale to a traditional recipe.

  Joan Cross has been making Cotherstone to a recipe handed down from her mother for over 30 years. Initially she made it in her kitchen in Barnard Castle, County Durham, leaving the milk to sour naturally in a big milk churn. Things have moved on a bit since then, but she still makes it in very small batches at Quarry Farm in Middleton-in-Teesdale. This is a very rare cheese. It's made with pasteurised cow's milk and is similar to a Wensleydale in that its moist and crumbly with a lemony tang.
